Gluten free Peanut Butter Cookies!

My daughter Meghan makes the easiest most bestest flour/gluten free peanut butter cookies ever!

The clincher: These things are super easy!

In fact these are as EASY AS 1-2-3... quite literally!

Here is thr recipe;

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg

yep- that is IT!!!

 

You can use creamy or crunchy.

Bake on ungreased cookie sheet 12 min. at 350 degrees or until edges are slightly brown. Cool flat because they are softer due to no flour.

We double the recipe, and you can add chocolte chips if you want to be bad! :)

Wow BethAnn! It just doesn't get any easier than that!!  Did you use natural peanut butter or the more solid JIF/Skippy/Peter Pan type??  Thanks for sharing. We LOVE anything with peanut butter!!

I use JIF or Skippy, but because of the sugar, I don't think it matters. It will still be good!!!

You mean if you don't add chocolate chips, it isn't 'bad'? LOL Truly can't get any easier than that, and they look REALLY good!

I am GF. Any new "simple" recipe is appreciated.

I like the simple pancakes Lois made me (bed & breakfast owner in Venice FL) a couple of years ago.

Mush up banana and eggs and fry like a pancake. Very light and with similar texture to a pancake.
